New Job New Recipe

Today was my first day at my new job!  It went really great!  I am the newest Scientist / Statistician for SC Johnson & Sons.  🙂

With my new job comes a change in my daily routine.  A few big changes will be with my workout schedule.  I’ll actually get home when light is still out!  🙂  My drive is considerably less and I couldn’t be more happier.  These first few weeks will be a chance for me to figure out what works best.

Along with my new job comes a refresh in my blog.  Since I have a bit more time on my hands at night I’m really going to get back to my cooking.  Over the last week I purchased a cook book by Rachel Ray, 30 minute meals.

Tonight’s dinner was the first recipe in Rachel’s book…Puttanesca Pizza!

A few ingredients in the pizza that I’ve never tried before: Capers and Kalamata Olives.  Since I was unsure on the taste of these new ingredients I decided to make only half of the pizza according to the recipe and the other half a bit more plane.  The resulting taste: very “olivey” if that is a taste. 🙂  The salty taste of the pizza with the olives and capers was a bit too much for my liking but it was still something worth trying.  I don’t know if I’ll make this dish again but at least I tried something new tonight. 

An interesting thing I did learn from this recipe was to use can diced tomatoes as the sauce for the pizza.  If you enjoy chunky tomatoes…just heat some garlic (1 tsp minced) and extra virgin olive oil (2 Tbs) in with the tomatoes and TADA…a yummy sauce.

Busy Last Vacation Day

Today was my last vacation day before I start my new job on Monday.  So what better way to spend the day than to go shopping with my Mom!  We had a busy day ahead of us so I made sure to have a good breakfast to keep me going.

Welcome Oatmeal (with Chia seeds & Peanut Butter mixed in) and Kiwi!

My mom arrived at 10:30 this morning and we were off.  Our first stops were Target and Kohl’s.  At Kohl’s I made a purchase I have been wanting for a VERY LONG time.

It was on sale plus a mail in rebate and a special coupon made the deal hard to resist!  I can’t wait to crack this baby open and use it!

After Kohl’s we went to Half Price Books where I picked up some new cookbooks.  One by Rocco Dispirito and one by Rachel Ray.  I’m pretty sure in the near future you will see some of their recipes. 

Next was Jo Ann Fabrics to find some shadow boxes and baby blanket fabric.

I’m planning on framing my half marathon medal and triathlon medals for display along with my bibs.  I’ll be sure to post what the final results look like!

By this time it was 2:30 and my mom and I were starving so we headed off to Champs for some lunch.  When we got there we were quickly reminded that it was March madness and that Wisconsin was playing!  We “enjoyed” the atmosphere and nibbled on Tropical salads.  The salads consisted of Grilled Chicken, strawberries, blackberries, pineapple chunks, blueberries, raspberries, mandarin oranges, and candied walnuts on top a bead of lettuce.  For dressing I selected the Peach vinaigrette while my mom selected the Raspberry vinaigrette.  It was such an amazingly refreshing and delicious salad that I didn’t even really use the dressing at all.

After some energy my mom and I were off again this time to SAM’s Club and then the grocery store.  Who knew shopping could be so exhausting?  My mom and I were both beat and decided pizza was the choice for dinner.  Not any pizza but Rocky Rococo pizza!  We ordered our pizza but unfortunately our order was messed up. 

Desired pizza: Whole wheat crust with sausage & mushroom. 

Received pizza: Whole wheat crust with onion & mushroom. 

So unfortunately we ended up getting White crust with Sausage & Mushroom after the pizza was remade quickly.  I was starving by this time and will admit that three pieces were consumed while only two were documented. 🙂

Desert was a purchase from the grocery store and another sweet treat because of the holiday…

I am such a fan of marshmallows covered in chocolate!  Right now I’m munching on some M&M’s waiting for midnight to come around.  Any ideas why?  Yep, the Twilight movie is released tonight and my sister and I are going to attempt to get a copy at midnight.  I know…we are nerds but everyone has their weird quirks.

Meal #12

Dinner was another success tonight!  Before I get to dinner let’s recap lunch. 🙂

I decided to grab a quick snack before heading out for a walk.

 

It was raspberry mocha flavor and it was very tasty.

I snacked on the bar while my iPod charged…I figured I would listen to some tunes while I walked today.

My walk took me about an hour and I went about 3.6 miles.  Nothing to fast just an enjoyable stroll around my town.

When I got home I was ready for lunch.  Any guesses what it was?  🙂  How about soup and a green monster?  Yep!

I added rice to the soup for some extra filling.

In the Green Monster today I put:

  • 2 cups Spinach
  • 1 cup milk
  • 1/2 banana
  • 10 frozen strawberries
  • 1 kiwi

I was surprised that you could taste the kiwi over the banana.  It was very green and yummy.

Onto the main event of the day: Meal #12

I found this recipe in my Cooking Light magazine Shiitake and Sweet Pea Risotto

I made a few modifications:

  • I cut the recipe in 1/2 and everything worked perfect
  • I used baby Portobello mushrooms instead of Shiitake mushrooms.

It took me about 40 minutes to fully make the dish but it turned out just awesome!

Desert was a repeat of last night…strawberries and chocolate coolwhip.

I may have snacked on a handful of M&M’s while making dinner that went un-photographed as well. 🙂

Today was a pretty calm day.  Tomorrow is Mom and Daughter day.  I have hopes of baking an applie pie from scratch so check back tomorrow on how that goes!  I’m going to head off and read my new Cooking Light magazine and try to plan out some meals for the next week.

Meal 11

Last nights dinner was a SUCCESS!  Jeff loved it and it was really healthy.  I got it out of my latest issue of Runner’s World Magazine.  It was Fettuccine Alfredo with Shrimp and Mushrooms.

The main ingredients of the sauce was chicken broth and greek yogurt.  I added in the shrimp and sautéed mushrooms for some extra veggies and protein and served it over whole wheat pasta.

For desert it was a simple and sweet treat.

Fresh strawberries and some Chocolate coolwhip for dipping.  It was the perfect sweet treat.

This morning when I woke up I knew exactly what I wanted for breakfast…Cereal & Yogurt.

So I mixed together the following:

  • 1/2 cup Kashi Heart to Heart cereal
  • 1/4 oatmeal
  • 1 banana
  • 1/2 scoop Chia seeds
  • Strawberry Greek Yogurt
  • Dash of cinnamon

Today’s weather is supposed to be mid 60’s so I’m really hoping to go for a nice long walk and then finish cleaning my house.  My mom is coming in tomorrow to spend the day with me and I still have a few things to finish up before she comes to visit.

Slow Morning

After last nights swim I was one tired girl and didn’t get out of bed until 10 am.  Being on vacation is such a great thing. 🙂  But I am itching to get to work, I never thought I would feel that way.  I guess I’m just ment to be a working woman.

Breakfast this morning was a classic favorite: oatmeal!

I added a scoop of peanut butter and 1/2 scoop of Chia seeds in the mix and I loved it!

I use the peanut butter as frosting when it gets all melted and spread it all over the oatmeal.

I also had a side of kiwi…a great mix of carbs, protein, and fruit.

After lying around on the couch for a bit and putting together a grocery list I decided I would try to squeeze in a little run and see how the foot feels.  Before heading out I snacked on an apple for a bit of energy as it was lunch time but I wasn’t too hungry yet.

How did the run go?  Not so well.  I did a short 2.75 mile loop and only ran about 2 miles of it.  The top of my foot was just aching with every step.  I’m starting to think that maybe this is something I should go to the doctor about.  Thank goodness the weather was beautiful to keep my spirits up!  It’s extremely sunny and about 55 degrees, perfect running weather in my book!  I love spring in Wisconsin!

When I got home I was starving and realized that it was 2pm.  I guess my oatmeal really filled me up.  I reheated a turkey cheddar link from dinner the other night, cut it into fourths and placed it between a bagel thin.  I paired it with some Kashi crackers and a green monster!

The green monster today was just as good as it was yesterday! 

In the mix:

  • 2 cups of spinach
  • 1 cup of milk
  • 1 cup of frozen strawberries
  • 1 scoop of chocolate protein powder

I have to quickly shower and run to the grocery store.  Tonight is date night and I have a great meal planned for Jeff and I!

The After Closets…

After only a few hours I was done with my tasks at hand…who knew when you focus on something you can totally crank it out!  I think it might have helped that I’ve been watching the show “Horders” on TLC.  That show is enough to scare anyone straight into tossing / donating unneccessary items.  Without further adu here are the after pictures…

What do you think?  Pretty nice huh?   I love using the containers under the sink it helps keeps things organized.  Another trick that I used was in the tall closet.  From a favorite food blog of mine Carrots ‘N Cake is to put the sheets inside the pillow case.  So I tried and it and loved it!  It sure made things a lot neater inside the closet.

After all that cleaning lunch was calling my name.  I decided to try something new and something that I’ve been dying to try.  Welcome Green Monster into my life!

In the Monster:

  • 2 cups of Spinach
  • 1 cup of organic fat-free milk
  • 1/2 cup of frozen raspberries
  • 1 banana

Mix it all together and enjoy!  The look is a little scary but the taste was so good and it’s extremely nutritious for you.  What a nice and easy way to get those veggies and fruits into your diet!

Along with the monster I had an overeasy egg sandwich with a slice of Canadian bacon and cheese on a thin bagel.  It was just what I was craving..along with a side of Kashi crackers.

 My afternoon flew by while I wrote my bio for my new job…want to see it?  It’s very informal and something that is sent out to the team that I’m joining.

“A lot can happen in one’s life in just the matter of a few crazy months.  Many of you know me but to some I’m a new face. 

I currently live in Oak Creek with my sister and our two cats.  I’ve had my cat Prince for 6 years while my sister’s cat is just 7 months old.  I have plenty of crazy kitty stories to share that will truly make you laugh out loud, as our house is always active.  I have been dating my boyfriend Jeff for a little over a year.  We enjoy going to downtown Chicago and Milwaukee to explore what the cities have to offer.  When I’m not working or going out with Jeff you’ll find me either running, biking, or swimming.  I’ve completed two half marathons, the latest at Walt Disney World just a few weeks ago, one triathlon, and two duathlons.  I’m currently training for a full marathon May 1st in Kenosha.  I have also just started food blogging so if you see me snapping a picture or two of my food please don’t think I’m crazy it’s just for my blog.  I’m also an avid baker and promise lots of goodies are instore!

Professionally my career has been centered around one main thing: Math.  In the past six years I’ve been doing statistical analyses for consumer product research and marketing.  I was previously a part of your support team, Q Research, for roughly 4 years.  After leaving Q I went to CDW as a Marketing Business Intelligence Analyst and have been there for the past 18 months.  I have had great hands on experience performing a diverse array of analyses both for marketing and consumer research. 

I am very thankful for being given the opportunity to return and continue helping you perform research at the highest possible level.  I look forward to what I can share with you from my time working for marketing.  Please feel free to stop by and say ‘Hi’ as it would be great to catch-up and meet the newest members of the CPI team.”

Dinner wasn’t very exciting at all…any guesses?  Leftover soup!  Since I didn’t have it for lunch I figured I should have it for dinner.

I think I definitely made my 5 servings of fruits and veggies today!  🙂

Desert was a nice tiny sweet treat of two mini candy bars.

My sister and I are heading to the pool shortly for a night swim.  I’m surprised at how great my arms feel from yesterday.

I woke up today ready to tackle possibly the worse closets in the house…the bathroom closets!  They have a tendency to be the dump all closets in the house.  When you don’t know where else to put something you put it in the bathroom. 🙂 

I’ll warn you the photos you are about to see are not for the weak at heart… 🙂

An energy filled breakfast is definitely needed before tackling the task ahead.  I decided to go with the same combo as yesterday but with Blueberry yogurt today and it was just as good today as it was yesterday!

I hear my bathroom calling…I’ll keep you posted on my progress.  I’m really hoping that this doesn’t take all day and I can get to the pool this afternoon. 🙂
